Poke cake! It's a yellow or white sheetcake, you poke a bunch of holes in the cake with a skewer and pour a fruit flavored jello mixture over it and let it sit in the fridge for 24 hours, the cake absorbs the liquid in that time and the texture is surprisingly light and moist. You frost the top with a light, creamy frosting that can be flavored with crushed berries, strawberry poke cake with the real strawberry frosting is always a big hit when I make it.
