Didn't he later admit he was talking out of his ass a lot of the time in Kitchen Confidential? Or I guess to put it less harshly, he was writing as though he knew a lot more than he did and making a lot of generalizations about how professional kitchens work, based on his own experience which was not universal.

Anyway. You already know it's irrational to feel guilty for not asking him how he was feeling. His best friends didn't know. He wasn't likely to open up to some random stranger on the internet.
