He interests me too. I'm sad we never really got to know more about him.

I'm curious about why GoT fandom likes to pair him with Oberyn.

It's because they're friends in canon and that's enough for shippers!

Not only are they both fairly scholarly. Willas is known for being particularly studious due to his disability preventing more martial pursuits and Oberyn made a few links of a chain to become a Maester before he tired of it and quit. Not only that, but they have a history.

They went up against each other in a tourney once and Willas was unhorsed by Oberyn. Unfortunately, his foot got stuck in the stirrup and the horse fell on top of him and crushed his leg, leaving him crippled.

Even though it caused a degree of enmity between the Tyrell and Martell Houses (or exacerbated an existing one given the ongoing disagreements between Dorne and the Reach), Willas didn't hold the incident against Oberyn and they remained friends. They even sent ravens to each other regularly because they share a mutual appreciation of horses.

Since Willas is a breeder of especially fine horses (and hawks, hence the picture) they have a lot a in common.
