See, for me that falls under the category of Creative But Doesn't Look/Sound Like Something I'd Want to Eat, which is my issue with most of the dishes. I'm not questioning the skill or innovation but... it doesn't sound appetizing. If that was a piece of art, I'd be intrigued. But I dislike the idea of eating something that looks like it was raked out of a muddy ditch by the highway, and I'm a fairly adventurous eater.
