Smore's Pie is awesome and relatively easy.

Chocolate Silk, but it takes some work.
Also, Pecan Pie, oh, and I made a Mixed Nut Tart that was good.

I tend to go for crumb crusts (graham cracker, nilla wafer, Oreo) because the traditional butter or shortening crusts are not my favorite, but I do like a cream cheese crust, if I want something flaky. And I lot of the people I know really like a Mock Chocolate Cookie Crust.
