(Anonymous) 2018-10-11 03:43 am (UTC)(link)If you're just starting off, I'd suggest starting with pies that don't call for blind baking, since that adds a layer of complication that you really don't need while you're still figuring out your technique.

(Anonymous) 2018-10-11 04:12 am (UTC)(link)Pro tip, freeze or refridgerate pie crusts (if you’re going to make you’re own pie crust which is totally worth the extra effort IMO) before filling and baking them. It prevents the butter/fat from melting too much when baking and keeps the crust from getting soggy. And if you have extra crust dough left over you can cut out shapes with cookie cutters and bake them to make these little biscuit treats. I like to use them to top my pumpkin pie.

Smore's Pie is awesome and relatively easy.

I tend to go for crumb crusts (graham cracker, nilla wafer, Oreo) because the traditional butter or shortening crusts are not my favorite, but I do like a cream cheese crust, if I want something flaky. And I lot of the people I know really like a Mock Chocolate Cookie Crust.
