But I think most people would say that football is mainstream in America even if most people aren't watching All-22 footage.

Sure. I still don't think it's a great analogy for fandom and whether or not it's mainstream. Maybe because the larger part of football (as a fandom) is watching it and... that's it. There's a lot more to fandom than watching TV/movies.

I'm aware those things exist, but I'm not convinced they make up the larger part of the football fandom. I think gambling on football games and fantasy leagues are comparable to buying merch and going to conventions. Most people who would call themselves football fans don't do that, likewise most people who call themselves fans of [TV show] don't do that.

In my office, about half my coworkers are in a casual fantasy football league. Some of them are in more than one. Few of them are big bucks, like most are $20-$50 buy-ins. Everyone I know is aware of leagues and wouldn't bat an eye if you said you participated in one.
