I think the Mike Schur/Greg Daniels universe is pretty much proof that this argument is nonsense. Ben/Leslie & April/Andy from Parks and Rec, Amy/Jake from Brooklyn 99 and (to a slightly lesser extent), Jim/Pam from The Office continued to be great and entertaining characters to watch even after they got together.

And in terms of both Parks and The Office, there were times when the overall quality of the show went down but the ships being canon were very much not the reason (except for the "will Jim cheat" nonsense arc that went nowhere but we don't talk about that). I wasn't crazy about the time skip in Parks and Rec's last season but seeing Leslie and Ben's relationship grow and deepen with kids and new job opportunities was one of the things that really did work for me.
