I haven't seen this myself, but I would never treat any kind of retail/telephone/customer service worker with anything but kindness and respect... Like you are totally right when you say people shouldn't be walking on eggshells- because there's a middle ground between acting like an asshole, and behaving like the person scanning your groceries has custody over your children or something...

This has to do with knowing the intimate details of retail work on both sides of the coin... My mother worked in phone sales for over fifteen years- my youth was a conglomeration of her coming home in tears, fearful, or as if nothing happened at all. She was a favourite among the customers more often than not, she did her job extremely well- but some people just went out of their way to make her life hell. She received numerous death threats over the years, all because she followed the bloody law, and wouldn't allow people to access accounts they didn't have their name on/had no business in...
At the same time, she was the absolute worst when it came to retail work herself. She'll spend hours in a store asking for manager after manager, just because she was raised to be frugal, and refuses to settle on anything but the greatest deal... Of course, that deal most often doesn't even exist. Most recently she spent two weeks straight, hours a day on the phone, just to get a television deal. She'll start immediately with threats, asking the employees personal ID and code- just so she'll know who's exactly responsible in preventing her from getting her deal. She'll become legitimately upset, being transfered from person to person, because they're all attempting to do their jobs trying to appease her, while maintaining that the just can't give her things for free. She'll cry, scream, swear, and whine, all while thinking she has a right to. (and with so much information going around all at once, the bill is never completely accurate. even getting a deal that simply wouldn't happen for anyone else, if it's even a dollar off from what she recalls, the whole process begins again and again)
It's something she's always done. I've lived most of my life both trying to console her on the bad days, and attempting to get her to understand that she acts exactly, if not worse, than the people that made her come home in tears...
I don't know if she just doesn't understand- or if she knows and just doesn't care... (and its been so long that I know it's the latter, even if she refuses to admit it)

I've had so much anxiety over this- and even when I know I could argue the validity of a coupon, or the price of a sale item, I just won't.
