I always wonder if competition shows pick those types on purpose.

American Idol famously featured terrible singers in the early try-out episodes of each season because audiences liked to laugh at them (I knew people who would only watch those episodes and not the real competition part). I don't know much about the GBBO selection process, but I, too, wonder if they purposefully throw in some people who don't seem to be that great because they seem to be interesting personalities and it might make the show more interesting.

I don't know how the selection process works - but IMO genuinely bad bakers really aren't that interesting on GBBO. Having meltdowns is different, everyone is prone to that to some degree, but people who obviously aren't cut out to be on the show are the least memorable contestants.

Mustache man didn't seem to have much of a personality beyond the great mustache and "I'm sooo lucky, gotta do better next week."

Oh, yes, absolutely. Even GBBO where the drama is nearly non-existent selects its contestants carefully. They have to in order to balance out the show. Watch a few seasons and notice how certain "types" appear - Young But Talented, Older and More Experienced, The Devoted Wife and Mother, The Ethnic Minority, The Burly White Dude Who Doesn't Look Like He Can Bake But He Can, The Underdog, The Perfectionist, The Goofy One With Weird Ideas, The One Who Can Bake But Not Decorate, The Artiste, etc. etc. And of course, combinations of all of the above.

Now in any group of bakers of course there's going to be a gradient of talent. It's not a coincidence that each season effortlessly sifts bakers into people who are definitely going to flame out in the first 2-3 weeks and bakers who will be competing for the semi-final/final.
