I didn't see anything wrong with either moving into fieldwork.

For Greg, he was shown as early as season 2 that he wanted to be in the field and there was build up to until he gained his proficiency in season 5. Considering how much of the show took place in the field, it's a little surprising they took so long once he became a regular. In the beginning, he was more of a supporting character, if a bigger part than the rest of the lab people. He was not regular cast (just recurring) until season 3. There were also plenty of lab people that stayed in those roles.

For JJ, when she 'left' it was supposedly for a job she couldn't really turn down and was a big deal, so it didn't feel wrong that she might have wanted something different than she had before.

There is nothing wrong with either of their original roles, but it's also not wrong for either character to want something different.
