I don't have any specific examples at the moment. But my favorite type of AUs are "what if" Aus where one tiny element of canon is changed, and then the author explores what that change would mean.

Soulmate AUs. Don't care how weird that would be in the real world.

Modern AUs for non-modern shows.

Kid fics. Either de-aging or people having kids.

Arranged marriage AUs, but of the intensely political kind where there's a lot of effort put into playing a role (OR ELSE THE TREATY WILL BE BROKEN AND THE KINGDOM WILL PERISH! or whatever) so it takes a lot of time, effort, and trust-building for the people to get to know each other.

I like pretty much all of them, except ones that are rapey (such as master/slave AUs). But only for my main fandom, which is Sherlock, because Sherlock canon just adapts really well to AU scenarios.
