AYRT: There's stories about "don't piss in the umbrella stand in asparagus season." But muggles before plumbing had entire industrial systems dedicated to the collection, processing, and use of night soil. Some cultures still do night soil composting. Hipsters still do it. (Reasonably safe if you compost it properly.)

My objection isn't just "gross" it's "that's really bad worldbuilding." It's an example of her not really thinking about (or giving a shit) about how things really need to work if you can just wave a wand at it.

This. World building is not one of Rowling's strong points. The stuff people ooh and ahh over is borrowed, and she doesn't do a fantastic job of filling in the details. This is why trying to fill them in well after the fact via Pottermore and random Tweets is backfiring so badly.

I don't know, I'd like to think we're postmodern enough to acknowledge that borrowing and knitting together a bunch of distinct influences into a new whole can still be a real accomplishment, even if it's not "worldbuilding" in the popular meaning

It's less knitting than tossing whatever canned veggies you have in your pantry in a jello mold, sealing it in lime jello, and bringing it to the office potluck as a "salad."

If a fantasy writer's answer to a question is literally handwavium, that's bad fantasy writing and authors have been panned for similar. It's acceptable to say, "I don't know, I didn't research that."
