I know that it's not technically "canon" but I refuse to believe that Riker wouldn't fuck dudes

Oh I agree. And we did get a same-sex kiss on DS9, so I've always interpreted Jadzia (and all Daxes really) as bi. But it is nice to have it explicit and up front and in the open.
