You cut up the pototoes into small pieces and then fry it with onion and garlic and thyme. Delicious.

Okay, that I can get behind. I was thinking more pierogi style, with huge chunks of onion in every bite;;
I do something similar in my oven, I'll have to try frying them next time for sure!

Scalloped potatoes are wonderful, and good fries (crispy outside, creamy/not mealy inside) are hard to beat, honestly.

before I went on my diet I used to make scalloped potatoes with bacon and cheddar and butter and a little paprika.

I’ve been making fondant potatoes lately, and I’m just obsessed with them. They’re so easy and they’re SO good.

Waffle fries. Or any kind of fries but mostly waffle.

roasted with toppings. chop 'em up, toss with a small amount of olive oil, roast, and then slather them with anything. my favorites are either taco fixings (making them nachos but with potatoes) or chicken, bacon, and cheese.

though I do have a great cream of potato soup recipe too.

Irish nachos: thinly sliced roasted potatoes, almost crisp but nooooooot quite, topped with melted cheddar cheese, chopped corned beef or bacon, and the usual sour cream, green onions, and jalapeno slices.

1) made into samosa filling and eaten as a soft taco in a wheat tortilla with chutney because who has the time or the oil to make dough and fry little dumplings?

2) simple hash browns, served with ketchup and/or eaten with a runny egg

I prefer yellow potatoes for both of these.
