Animals. If you're hunting, or trying to rid your apocalyptic garden of rats, you have to kill something. That's not Mickey or Bambi. Also, you may have to put down a rabid animal.

I'm pretty sure I can kill anything smaller than a deer but what I need to learn is how to field dress. It's one thing to hunt your food, it's another to get it ready to cook. I'm already planning to learn how to clean a fish but in the post-apoc landscape I don't think I can subsist on sashimi forever.

How to find, treat, and store clean water and food is probably going to keep you alive the longest.

Seconding water and all things water related. Food is very important, but you have a while to find or figure out food. You just have a couple days to find and figure out water.

Unless you were about to get heavy snowfall and had no food stocks, then you'd have the opposite problem: frozen water falling from the sky and covering all the food for months.

a little basic meteorology and astronomy will come in handy more than most people realize.

when you understand the weather, you'll know when not to camp next to your water source lest it flood in the middle of the night, when to bulk up your winter shelter against below-zero temps, and how to prevent an awful lot of problems that aren't an issue for suburban idiots inside their insulated homes but would be a fatality waiting to happen after the apocalypse, like not getting heat stroke, dehydration, hypothermia, frostbite, struck by lightning, or drowned.

astronomy for navigating, once you can't just GPS your shit anymore. that of course assumes a nomadic culture but even in our future walled citadels guarded by militia, we may need to return to astronomy for timekeeping purposes.

Basic first aid. No apocalypse comes without its share of injuries, and dying from sepsis because you don't have the first clue how to treat a wound is just embarrassing.

Knowing enough about plants to be able to effectively forage for food/medicine.
