The great thing about fandom is that characters can be just friends in canon and in some fanworks, while at the same time being a couple in other fanworks. When I ship a couple that are just friends in canon, it's never because I don't love their friendship and think they need to be a couple. I just like being able to imagine them being one.

But if it's not your thing, you're not doing fandom wrong unless you tell the shippers that they're doing fandom wrong. Which IME does seem to come hand in hand with questions like "Why can't they just be friends?" most of the time. So if you're going around asking shippers those questions, just... stop doing that and you'll be fine.

Shippers however are attacking Neil Gaiman and anyone else who doesn't ship it with "it's queerbaiting and if you say they're asexual you're desexualising people and you're homophobic because clearly they're having all the gay sex" so yeah, I'm with the OP on this. Can we stop with the "clearly x therefore my ship is the only valid interpretation and anyone who disagrees is a bigot" crap.
