If you don't mind anime, there are many that fit your criteria. They are usually juvenile and male power fantasies, though. But some aimed at girls are pretty cool like Yona of the Dawn or The Ancient Magus' Bride. There are cool fantasy video games too.

Ancient Magus's Bride might not be up OP's alley b/c of the protagonist's relation with the Magus

If you don't mind something a bit more lowkey on the fantasy side, OP, Natsume's Book of Friends is Excellent.

What have you found that does fall into that sweet spot for you, OP?

I'm curious about this, too. Maybe more old-school fantasy might work?

Is it the YA that bothers you, the romance, or both? I can think of good fantasy that’s only one and not the other, like The Sharing Knife or the reboot of She-Ra.

My usual solution to this problem is to go with children's novels (or middle grade or whatever they're called now.)

Farmer Giles of Ham?

Yeah, I feel you, anon. I'm happy that YA fans have a lot to read, but as a person who's not really interested in reading about teenagers* all the time, I have to say it's getting difficult to find non-YA genre books.

/* I know that the protagonists of YA novels are often a bit older than teenagers, but the tone and complexity (and world view) of the whole YA genre is fairly teenager-level most of the time (the same goes for relationships).
