I remember that book, as I too was obsessed with both horses and The Saddle Club as a child (still obsessed with horses), and it wasn't just the white horse thing that caught that girl out. It was also that she said her horse threw up (they physically can't), and that her aforementioned white stallion (the stallion part was just as big of a red flag as the "white" part) kicked her in the leg while she was riding him because it hurt him when she grabbed his mane for support. See, horses don't have very many nerve endings in their mane hair follicles, so grabbing their manes like that isn't really gonna hurt them. There was also the fact that she kept telling wildly inconsistent lies about her past experience.

Also, I've found that how insistent horse-people are about not calling grey horses white largely depends on the overall culture of each stable/ranch/riding discipline. Some don't care either way, and others care SO MUCH. On the whole, I'd say that stables/riders who are mostly focused on English riding tend to care more than those who are more into the Western disciplines, and since the Saddle Club girls only rode Western when they were at their friend's dude ranch, it actually makes perfect sense that they'd be very particular about using the correct terminology (just like I was at that age).

Now, to make up for that tl;dr infodump, please enjoy this picture of my dearly beloved and sorely missed grey Arabian gelding, Sharif. He was my best friend for 20 years and I miss him more and more with each passing day.

Aw, thank you for sharing your horse pic! He's so beautiful. I'm sorry he's no longer with you.

(I do think it was fair that they exposed the girl's other lies, but I thought including the "white" thing was incredibly petty. And my stable was exclusively English riding too, so I don't think that had anything to do with making the characters be so particular.)

I’d be really impressed to see a horse kick somebody in the leg while they were riding it. I guess it’s theoretically possible but that’d be some serious horse yoga. If it was a mule I’d find it more believable. ;)
