I have a similar issue, OP. I read the summary of a book and think wow, that sounds great! Then I start reading and it's... okay, but didn't blow my mind. Then it keeps getting worse until I realize it's yet another book with a fascinating concept but the actual writing doesn't live up to its neat premise. It's really discouraging. :(

That might be it a little too. More interested in the idea than the execution.

Because it's like I'm most engaged when it's the beginning and there are so many possibilities it could go and start losing some interest when the story actually starts focusing on a path. And it's not like it's bad choice but just feels - safe maybe?

This tends to happen to me, with fanfic, as I start to burn out on a pairing. As the fixation wanes, that's always when I find myself getting bored of fics part way in and thinking, like, "I could finish this. It's not bad. But do I really want to?"

Yes, I feel the same way about published fiction. It's often not awful, it's just not very good? Finishing the book feels more like a chore than fun, and I read for fun.

Same, it's always been a big problem with me, I can't seem to finish anything.

Thanks for taking my secret and making it. I like that you chose the trail of a forest.

It feels nice to see other people struggling with something similar. I haven't been very active in fandom spaces because I've been struggling to stay committed with a story and I miss it.
