The closest I've ever come to a ship being canon is it being ambiguous onscreen, and then the showrunner coming out later and saying, no, they're just friends, so on the one hand I want a ship to become canon just to see what it's like.

But on the other hand, I agree with you. It seems most writers (at least of stuff I watch) are awful at romance, so I'd rather not give them the opportunity to screw it up.
