I don't hate her. But she's definitely not a favorite, and there are a lot of things about her that bug me. Actually, there are a few things about Arthur that bug me too. Honestly, the Weasleys just didn't seem like this ideal to me that JKR wanted them to be.

HP (like, as a fictional universe) has the problem that JK started from a lot of stock characters and simple formulae, and some of the traits of those stock characters didn't really mesh well with the later stories adding depth and complexity.
Indeed, some of the stock characters didn't mesh well with the original lot of tropes, if a reader thought about it too long - Harry Potter is an abused orphan who lived in a cupboard for years because Tragic Orphan with Cruel Family has Great Destiny, but Albus Dumbledore the Very Powerful Old Wizard is at once Caring Mentor who Knows All and also never did anything about the abuse because... whoops, we forgot to crosscheck our tropes.
Molly Weasley is a warm maternal figure because Harry needs a warm maternal figure to pop into the story occasionally and remind the reader what he's missing out on, but she's also a nag who doesn't listen to her children when they tell her stuff like "Harry was literally imprisoned in his room, they locked him in and put bars on the windows" because Nagging Mothers Are Funny. The Weasley's are poor because Goodhearted Poor Family With 20 Children is a staple of British literature, but... does the wizarding world not have birth control? How are they poor anyway? Can't they fix all their broken shit with magic? How *does* the magic economy work? So many questions!

JKR does tell us how flawed they are, but she's writing them from Harry's perspective.
