From what I can find about Hanukkah, there is no set way. Since gift-giving (beyond gelt) is relatively recent, I think many families came up with their own ways. Sometimes it is the last, 8th gift, to be the most expensive. I do think it is pretty common for at least on night to be charity or giving back. Some people don't do eight gifts, just one.
