I feel like I usually like canon!OCs more than straight-forward OCs? Like where a minor character essentially gets turned into an OC. It's just hard for me to buy an entirely new character coming into the canon, I guess.

Eh...personally I feel like in some worlds it's fun to explore the greater world outside the specific setting of the canon. But it's a personal taste thing. :)

I did this with Nephry Osborne in Tales of the Abyss, writing all kinds of in-depth fic with her as the principal character, and it seemed to go over well! I like this approach too.
