And I think that the most important determining characteristic of the quality of a season is the quality of the bakers, followed by production choices (editing and challenge choices and stuff like that), with the hosts and judging in a distant third.
Third - I actually agree that Paul giving out the handshakes so often really annoyed me. But I think what you're missing is the different dynamic between the judges overall. Prue was harsher as a critic than Mary was, but Paul was much less harsh overall than he was when Mary was the other judge. I think it was a general attempt to change the judging dynamic and I think describing that as Prue being "a bitch" is unfair.
I know a lot of people just don't care about anything except saying that they miss Sue, Mel and Mary and won't watch the show anymore, and that's fine, but I just don't totally agree with this secret.

I'd like to think Paul shook hands with people who did well; he always seems sincerely impressed with show-stoppers that would never make it on a 'pro' level, but are obviously the very best the person can do and were done with love and pride.
It's not the same show as it was, but I still enjoy it.

Mind you, she didn't say that the previous recipe was better, she said something like "I would've thought this was good if I hadn't just eaten a better one" which was completely unnecessary and not keeping with the spirit of the show. I'm not saying criticism is never warranted, but Prue can sometimes be callous with her remarks. Mary knew how to offer suggestions for improvement without being unkind, and you could see how well bakers responded to it.
