ISTG, it's like Lucas said, "Okay Mark, the problem is you don't look as young as your character is supposed to be, so I want you to act as young as possible." And thus, Luke talked like a whiny/mopey fourteen-year-old for a lot of the first movie, while having the face of a grown man.
