She also has a power complex, so I think she likes the idea of something relying on her - I feel like she had a line that said that to some effect, only more nicely. And I'm sure she also is rather lonely, and is looking for a connection, even though she's a total asshole.
It's bullshit that she had her choice "taken away" though. She defied orders to go through with an unnecessary operation so she could be pretty, and consented even after she found out the cost.
Overall, if her plotline absolutely HAD to be "wants a baby", which inherently is a bit cringey, I don't really mind how it played out. I didn't like Yennefer at all post-operation but she does have an interesting story and motivations, and I like that the rest of the narrative is willing to be sharp with her.
