Oh~ I haven't heard of this one. Is it the juice you drink, or is the ginger made into a sort of paste/spread?

No it's thinly sliced. Often served with sashimi and sushi (along with wasabi paste). I have been known to buy a jar of it and just eat it on it's own.

Okay, now that sounds more familiar! Honestly, I don't think I've ever tried it. I've only recently started putting a dab of wasabi on my salmon/tuna sushi, but I was never quite sure how to pair the ginger with what I normally order. I'll definitely have to try it next time I order in!

You eat it between sushi to cleanse your palette. Unless you're eating sushi with me, in which case I'll steal all the ginger and you'll get none :)

Ah, that makes a lot more sense than putting it on top of the sushi then! I'll be sure to order extra so we can both have out fill!

Depending on the source, it's usually a very pale pink-ish orange color. The slices are very thin, almost translucent. It adds a slightly sweet and gingery element that I find balances the sharpness of the wasabi very enjoyably.

That does sound delicious, I'm disappointed I haven't tried them yet!
