Nuts were my go-to as a kid because I hated sandwiches. Hummus with veggies or bread. I always like doing a salad because I can add meat, nuts, fruit, and stuff to make it hearty.

Raw veggies with dip, cold cuts or chopped chicken breast, hummus, string cheese or babybel, crackers or bread. Maybe not all of those things but some combo of it. Helps if you have some kind of bento box/lunch box with compartments.

If you don't mind reheating stuff, you could also throw something in a crockpot and freeze and/or portion out the meal.

Eggs, and breakfast meals! They're typically quick, versatile, and easy to make. Pancake mixes, bread, sliced deli meats, salad ingredients (from lettuce, vegetables, and even fruit), can make for hundreds of delicious meals!

Egg Drop Soup is possibly one of my favourite soups and is deceivingly simple to make. (I found it to be easy, at least;;) Technically all you need is broth, eggs, and salt/pepper/garlic, to add to your taste. Sesame oil (toasted is the best kind) will add an irresistible flavour to the soup, and green onions/ginger will also add new delicious dimensions to your soup. Basically you just bring your broth (chicken) to a boil and whisk in the eggs and spices, that's it!

Canned/boxed/frozen food can be altered or prepared the night earlier to make tasteful ready to go lunches. Campbell's has a boxed Squash Soup that I like to add applesauce and (because I prefere mine to be more savoury) spices such as paprika, lime, and garlic, to it.

You can put canned baked beans on buttered toast for an open faced sandwich.
Heat frozen vegetables in the microwave to give them a quick steam, add butter and salt/pepper/garlic to taste for a healthy little side, or make it into a meal by adding chicken. You can buy mixed vegetables that have a wide variety of styles/flavours, stir-frying them in a skillet is my preferred way to cook them. Cook the chicken first, and then add the veggies, so the chicken isn't under and the vegetables don't get overcooked.
Frozen fruit can go into a blender with yoghurt and milk to make a smoothie. You can use icecream, and experiment with different variations of fruits!

What's your budget like? I'd at least start with more variety in your sandwiches since that's pretty easy to switch up depending on your mood. An assortment of cold cuts, cheese, fruit and crackers could also be good.

Overnight Oats - You can add basically any type of oats, seeds, nuts, milk, fruit, etc and have a tasty and filling snack any time of the day. I prefer having these for lunch rather than breakfast and I love that they're ready made (from the day/night before) in the fridge whenever I get hungry.

I usually make a batch of whatever on a Sunday and pack it up for lunches for the week so I don't have to make something in the morning or even the night before.

Another option is just to make an extra portion of whatever you make for dinner (assume that's not PB&J, too) and pack that up for lunch.

Sometimes I really hate people

I got told today by a lady who was parked in a handicapped spot to pick up her kids from daycare that I, as a handicapped person with a meeting in the same building, was rude for telling her she couldn't park there. It happens all the time there too. I'd call the cops if I thought they'd show up before the parents were gone. The daycare people keep telling the parents not to do it, but the parents don't care.

Someone in my town's FB group posted a picture of a blood orange asking if it was a regular orange someone had injected with HIV infected blood. ?!?!?!? This was a grown ass adult.

That fucking sucks. People do that at my school all the time. It’s a school for special needs children and we’re always telling parents who don’t have the placards to park in the general lot because parents with placards need the extra space to put together wheelchairs and get their kids in and out of the cars, but a shocking amount of people are assholes about it and don’t move.

A friend of ours who became a paraplegic in high school carried a knife that he would use on people's tires for parking in the handicap spot.

I can't stand the nerve of some people, that's just horrible. It's not like parking spots are huge or anything either, I'm sure they could easily find an open one that's only a few steps over, but some people just insist on being selfish and cruel. Like how dare them.
Is it possible to take a picture or something? Call the cops so even if the person already left you have evidence and a licence plate number to call them up on? Then again it'd only take time out of your day and there's no saying if the police will even follow up on it... There's really not much of a winning scenario here.
