I fried up some potato chips in the metric ton of bacon grease we keep in the fridge and made ham sandwiches. Today was lazy night. XD Tomorrow is also lazy night with leftover coq au vin.

It's really, really forgiving so long as you make sure there's enough liquid in the pot. When I'm feeling extra lazy, I just dump everything in a roaster and cook it low and slow in the oven, sticking the broiler on at the end to crisp up the chicken skin. XD Blasphemy? Perhaps. Delicious? Yes.

Ravioli Lean Cuisine and cantaloupe. We're having separate dinners because I had a 5:30 to 7:00 zoom meeting and my parents have a 7 to 8 zoom meeting.

Nice! I bought some papaya and mango a week or two ago and figured I'd freeze the pulp/fruit...maybe I'll snack on that...

Did you make it yourself? I've been watching food videos on youtube and subscribed to this lady you gives me major auntie/sweet neighbor who makes you food vibes, and all of her meals are these delicious looking Korean recipes...and all I want to do is eat.

Used Easter ham leftovers to make a big ham sandwich on rye with plenty of mustard and mayonnaise, dill pickle and potato chips on the side.

The "fish and chips" sort :). Though sadly we didn't have any chips on hand. Something to pick up whenever we next trek out to the store.

I put some grape tomatoes in the oven until they burst and then ate them in an open-faced sandwich with ricotta, olive oil, basil, oregano, and pepper. Not really enough dinner. I have potatoes to use up, so I am going to make a vat of mashed potatoes and save most for later.
