Leftovers. Meatloaf, potato casarole, green beans, and sauerkraut.

Tossed a bunch of diced veggies (bell pepper, squash, cucumber, and onion) and fake meat (quorn brand) in a pan with plant butter, salt, pepper, ginger, and paprika. Then I topped it off with fortified nutritional yeast.

Pasteles, rosemary french fries, and salad. Mango Ice cream I made last night for dessert!

Pasteles are a Puerto Rican meal -- seasoned mashed up plantains (and sometimes root vegetables) filled with seasoned pork (or chicken) wrapped in a banana leaf. Used to hate it as a kid, but now I love it! And it's pretty filling!
