Good quality meat should be prepared as simply as possible. Keep all your elaborate sauces and your army of condiments for the lesser meat.

This is how I feel about seafood. Most seafood is delicious on its own and doesn't need much done to it. Also doesn't need much cooking.

I feel this way about steak. Give me a ribeye, porterhouse or T-Bone rare, salt and pepper only. I gag a little inside when I see people serving it with a scoop of butter on top. Now don't get me wrong, I love butter. I don't want my steak to taste like butter, what a waste of good meat!

No butter, but I prefer my beef with more sauce on it. But then again, I don't really love beef. Give me seafood or poultry over beef or pork any day. I could totally happily give up beef and pork, except I currently live with my parents who both love them.

The most I want on a steak is a shallot/red wine reduction done with the pan juices. Maybe some horseradish sauce if it's prime rib.
