I'm sure I'm going to get yelled at for this but I really think of most Disney movies as being for kids, not adults.

I think way, way too many adults enjoy them for that to be the case. Also, I haven't really been that into Disney since it joined up with Pixar all those years ago, but as someone who is a very hard sell on kid's movies, Aladdin and Beauty And The Beast are still entirely enjoyable to me. I also found Frozen and Tangled enjoyable. None of those movies feel like movies made specifically for kids, to me. They feel like movies that will be enjoyable and appropriate for kids, but are specifically designed to be enjoyable for adults, too.

maybe it's me. I liked Disney movies when I was a little kid but I can't get into most of them at all now.

They are, but they throw things in for the adult audience, since that's who is taking the kids to see them. Pixar does, too.

AtLA (and also The Lion King) would be examples where the whole story is accessible to any age, but is enjoyable on that basis.
