1. In many a lore, neither vampires nor werewolves eat humans.

2. Yes, the fact that they are called monsters does mean something - it means that people consider the things they do monstrous.

3. Just because something is popular in fiction doesn't mean that people condone it in real life - in fact there are many things people are fine with in fiction that they would revile in real life. Because fiction and real life, while related in myriad and intricate ways, are not the same.

4. Symbolism in fiction is totally a thing.

5. I think there is also a case to be made about what constitutes a different species.

they're a gd metaphor, jesus, yes. I mean, dracula started out as a metaphor for sexuality (the piercing of virgin skin, drops of virgin blood, the quickening of the woman's sexuality, his following of "brides" who had succumbed to him.)

certainly vampires aren't cannibals. what a weird supposition.
