There was an Attack on Titan fic where the characters/main ship kept getting reincarnated in different periods of history and getting all their memories back when they finally ran into each other. It looked like it was getting closer to revealing why it was happening but the author had stopped updating.

There's quite a few. Some of them are dropped, some are WIPs.

There was a pretty fun "characters react to thing they are characters in" for Fullmetal Alchemist: Brotherhood, which had some unusual quirks to the execution, but the writer deleted it because some arseholes kept telling them they were violating copyright for having show dialogue in their fic >:(

The 21st century is not prepared.

~ Double Agent Vader - https://archiveofourown.org/series/286908 - Star Wars - Last updated 2017 - A few years after the rise of the Empire, Darth Vader has a moment of clarity, and becomes a spy for the Rebel Alliance. By and by, he comes into contact with, and becomes mentor to, Princess Leia Organa. Has a lot of fantastic worldbuilding.

The last two sound great and I don't want to click and engage only to be filled with sadness when there is no end lok

Individual instalments in each series are complete, and tremendously enjoyable - it's just the whole stories don't have an end. Check them out anyway?
(Fair warning - DBSWYHBMM is the work of five different writers and the quality of the writing is a little variable; but the whole thing is still rather fun)

Harry Potter fic, Harry Potter/Severus Snape, such interesting explorations of magic, with Harry as some amalgamation of himself and an original character (there's an in-story reason for such that works for the story) which makes for an engaging perspective. It was a very long, involving fic and I just want to know what happened next.

Yes! Last update was in 2004 or so, and the mods of the mailing list kept sending out notices that the author was still working on the story.

This is one fic I will probably keep hoping for updates on forever, while also fearing for the author's health and life forever, since she had chronic health problems that had been kicking her ass for years before she put the fic on hiatus.

Some of the plot and bits of the characterization were later jossed, but it's one of those long fics that shows the mundane details of the viewpoint character's life without ever getting boring. It's an arranged marriage/Beauty and the Beast AU (the canon ship is a Beauty and the Beast AU, but the canon's focus as a whole is on way more characters) so it's right up my alley.

The sex scenes start out a bit, well, romance novel, but the author was originally planning for the writing style to be more purple prosey to fit with the viewpoint character's idealized worldview, and evolve as she grew more experienced.

And it's fun to have a het ship with the naive female partner pursuing their slightly bewildered spouse, who takes some convincing that yes, his beautiful young wife is actually into him once she realizes sex is actually something she likes rather than the boring duty she expected.

For a long time, it was the first F/M fic to show up if you sorted all of Ao3 by kudos, hits, or comments; iirc I think it got mentioned on a NYTimes blog as the best known het fic on the site.

The notoriety caused issues; fans were mad that the author wasn't writing a "babies ever after" fic, even after she warned them repeatedly.

And she didn't want it translated until it was finished and revised, but a Russian fan (or group of fans idk) ignored her and then blew her off and posted a Russian translation. I guess she was also worried since she couldn't read Russian and didn't know if it was a shit translation or not.

I hope the author is doing okay or at least treading water in this fucking megalodon shark infested dumpster fire of a year.
