After watching The Trouble with Tribbles, definitely watch DS9's Tials and Tribble-ations where they go back in time to The Trouble with Tribbles. It's fucking hilarious and very well done. There was a making-of special that went into all the stuff they had to do to re-create the look of TOS, not just sets and costumes but stuff like fight choreography. Don't know if that's available anywhere, though.
