how can you tell when fictional characters' birthdays are unless they're specifically mentioned in canon?

Not OP, but I can think of quite a few canons where they're mentioned or shown on screen (IDs, vital stats on the computer, etc.), but also a lot of creators put that kind of stuff in supplemental materials (like official websites) or some fan will ask and they'll give one. If it's somewhere, some enterprising fan will probably put it on a wiki - like, Sirius Black's birthday is November 3, 1959 (https://harrypotter.fandom.com/wiki/Sirius_Black).

For one of my faves, I kinda had guesstimate -- using the movies to estimate the cost year he was born and any behind the scenes material in the DVDs to come up something. context clues mostly, and unless a day and month is specified I use the actor's birthday, or whatever I feel fits them.

I never liked that "use the actor's birthday" thing. It's like all those phone numbers starting with 555.
