Bastion is a very visually pleasing game indeed, and I would say that Supergiant Games just generally has a good look to their games (but Bastion is the only one I've played).
I also found Far Cry 5 quite pretty in places - there's some really nice bits of landscape to admire in that game, when you're not being shot at or chased up a tree by another damn wolverine.
As far as comics and manga... I can't think of anything but the work of Kaoru Mori. Otoyomegatari, or A Bride's Story, is just a non-stop visual feast. There are so many engrossing details on every page, I can hardly focus enough to read the story!
