Hah! Well if it makes you feel any better, the homemade stuff doesn't necessarily taste a whole lot different than store-bought (as long as it's actually 100% maple syrup and not "pancake syrup" which is usually mostly corn syrup :P). The main difference in my case is, since I don't have all the fancy equipment, usually there's some of the "sugar sand" left at the end instead of getting it all filtered out. Some people apparently find it gross but it's not harmful, so I don't mind a little of it in there. Other difference is that since I control the boil, I tend to boil it to a slightly higher temperature so it's a bit darker, thicker, and stronger, closer to a honey consistency. Makes it easier to spoon out of the jars after it's been canned. ;)

But after even the first time I did this, wow, I see why pure maple syrup is so expensive. The only reason companies can sell it as LOW as they do is because they have the capacity to make it in bulk all at once without constantly babysitting it.
