While the friends might be a problem, I assume it's pretty hard to effectively isolate yourself from roommates. Even if you had refused to have dinner with them and their friends this time, you would have been around the roommates eventually and you can't control if they come into contact with friends or other people (I don't meant to be flippant about that - it sucks to be stuck with people who might pose a danger to you, but it also doesn't mean all the responsibility falls on you). Also, there's no information here regarding whether the roommates have formed a bubble with these friends, how careful any of these people are being in general, what their risks of exposure are, have any of them had Covid or been vaccinated, etc.
