Apart from AoT which I'm hate reading, i avoid all manga that involves fighting since i just cannot follow what is happening.

I tell a lie. Berserk is my exception. Some of the earlier arcs are a bit unpolished when it comes to action but for the most part i haven't had any issues.

I could kinda follow MHA and Fullmetal Alchemist. And Gantz, but Gantz sucks anyway.

I haven’t read much of Last Order, but I think at least the original Battle Angel Alita run (especially from the motorball arc and beyond) is one of the best action manga in terms of “readable” fight scenes.

And it’s more down-to-earth, but I remember the bit I read of All-Rounder Meguru had really clear fight choreography too.

Have you tried One Punch Man? The fight scenes are very dynamic, but still easy to follow (at least, I found them to be).
