I'm the opposite way around though, generally I think I prefer harder sci-fi* to my dad! However, I also agree with your interpretation of Stargate. In fact, I'd say the show lost a little something when they inevitably had to bring in star ships and interstellar travel (both for humanity) in order to up the stakes. But at least they kept the mythology and how that related to humanity through basically the entire run.
*(I don't mind so-called soft sci-fi either tbh, but my dad isn't here for overly technical stuff and doesn't read science fiction novels.)

Admittedly that's mostly because of the suicidal detective who desperately needs, like, just a hug. And maybe a "good job" sticker. And the dude who is all beefcake but reasons essentially like a kid. "Don't make me kill you. Who would fly the ship?" being said in a very concerned and genuine voice being one instance of that dichotomy on display.
Plus you get all the conflict between Earthers (people suffering a planet-wide resource shortage and suffering in poverty), Belters (people who were born and raised in space and usually wouldn't survive living on a planet, treated nearly as a slave class), and Martians (people who colonized Mars and have a distinctly nationalistic mindset.) It's just fuckin' good, man.
