I think people who have eaten human meat describe as tasting like sweeter pork.

And people that works in crematory says that burnt fat smells like pork fat as well.

From what I remember, that's because mostly the non-bird and non-fish meat most cannibals had access to was pork, and based on chemical composition and stuff we'd taste more like lean beef.

Although based on our diet, you'd think humans would taste more like pigs since we're both omnivores.
