I guess it depends on how much of a sauce person you are? Or if the type of sauce itself too. Storing some of the sauce away and then adding it back works best with red sauces imho, when it comes to bechamel and similar ones I just add a bit of cream or butter to rehydrate it back. There's no such thing as too much sauce either :P
