To be honest, I can personally kind of live without that sort of pair-the-spares eat-your-veggies f/f ship. But I get what you mean.

This. Sure if there's another character (m OR f) that the lead girl has chemistry with, go ahead, but to just slap her with someone else for no reason isn't a think I like.

I agree with OP that fics that demonize the female character are almost invariably bad. But the issue of what to do with her other than hate on her is considerably more complicated and depends on the fandom/characters. Like, if the female and male characters are part of a work team or are childhood BFFs or something, then ignoring the female character is a bad move. But if the only connection she has with the male characters is that she dated one or both of them in canon, then ignoring her in m/m future fic can be totally reasonable; plenty of people don't stay close to their exes, and if you're focusing on the male characters at a point when she's not part of their lives any more, then there's no real rationale for shoehorning her into the fic.

Rather than prescriptions about including the female leg of a love triangle no matter what, I think the best thing for authors to do is to really think about the type of story they want to tell and the implications of the writing choices they're making. Sometimes this might lead them to expand the role of the female character, and other times it might lead them to reduce or eliminate her role. But both of those are valid choices in different situations.
