I'd precook some sweet potato, black beans, leafy green. Put some tahini on it after reheating it. I've brought sweet potatoes and reheated them and they were fine but I might check for food safety if I were you.

Chili is always easy to make ahead and reheat.

I've done figs and goat cheese, drizzled with honey but it's kind of weird to eat it as a lunch.

Burritos are pretty okay if you toss em together in the morning.

I could do some more variety myself. I used to eat a really varied nutrient rich diet when I was dieting because it helps to eat you feel satiated but I'm out of the practice now. Too much mac and cheese lately!

Once winter comes around, I'll be doing more soup! I was thinking of getting some microwavable burritos to keep around. Just need to find a brand I like.
