I've co-written with a couple people in fandom and it was really awesome and amazing...while also being a bit frustrating for exactly your reasons - it's hard to give up control and compromise, sometimes.

Maybe if you had a clearly defined outline and really 'different' characters, you could write with someone knowing you had the same goal in mind, and you had total control over parts of the story....
