Doesn't the understanding that T-Rex was thicc post-date the first movie?

Yup. Same with the dinosaurs having feathers fact as well, the latter was a hotly debated opinion back in the 90's and the former is more of a known thing now. So yeah the dino's are dated in this because it was literally 25 years ago and we didn't know what we do now.
