The problem with epithets is that so much of the time in fanfic they don't make sense to the POV character. Sam isn't going to think of Dean as the "the blond" or "the green-eyed man." (Unless there's amnesia shenanigans or something.) So they stand out in the worst possible way.

Right? If you occasionally replaced Sam or Dean with "his brother" in a fic from either's POV, it would work just fine.

See this is why I don't write with a PoV except a narrator.
