I don't hate the later books. I don't think they are terrible. But I've just always been more interested in Anne, Diana, Gilbert, Matthew, and Merilla than in any of Anne and Gilbert's children.

I always loved Anne's kids (and their friends, the Meredith kids are fantastic), and liked her as a mom/maternal figure because it seemed like such a great fix-it - she was alone with no parents or siblings for most of her childhood, abused and neglected, and she gets to grow up to be the loving adult figure she needed as a kid and give her own kids the happy secure family life she never got to have, as well as being the friendly supportive adult in the neighborhood for other kids too. I also feel you on the Walter love...preteen/teen me had such a literary crush on him in Rainbow Valley/Rilla of Ingleside lol. Also, as a fan of Anne's kids, if you haven't read any of the works of elizasky on AO3, you NEED to read the works of elizasky on AO3.

I've never thought about looking for fanfiction of anything related to these books, but I'll give that author a look, thanks!

I don't really enjoy any of Montgomery's child characters in the Green Gables series outside of Anne and her friends. It's partly my low tolerance for baby talk in the dialogue, and the fact that the stories about the kids are repetitive. The twins each have a story about a little girl BFF who turns out to be a psycho and that's just too much for me.

I liked her Story Girl books, though. And the child protagonists of her other series were fine.

I hated those twin finds a bad friend stories too. They were in Anne of Ingleside (or at least one of them was?), which was way down on my ranking of the books. That one also had the story about the aunt who everyone hated, and I hated that story too because it kept drilling in the complaint of how dare the aunt not like onions, she's ruining everything by not wanting us to make food with onions in it! As someone who also hated onions as a kid, I took that personally (...as a kid) as saying "Hating onions will make you into an annoying person."
